I want to write a few words about buckwheat. And before you run away because you don't like buckwheat (which is completely understandable), I want to say that there are ways to change the taste of buckwheat and I think it's worth giving it a chance - because according to Chinese medicine, it balances the digestive system.

 

So what does it mean to balance the digestive system? According to Chinese medicine, our organs can be in a state of balance/deficiency/excess. A state of excess will manifest itself, for example, in severe heartburn, severe abdominal pain, or a flare-up of inflammatory bowel disease.

A deficiency will manifest itself in other, equally annoying symptoms: abdominal bloating, gas, a feeling of constant discomfort in the stomach that is relieved by warmth/rest/touch.

As a general rule, we can say that what is better at rest indicates a state of deficiency, and what is better during movement indicates a state of excess.

 

Buckwheat is a grain that can balance both symptoms of excess and symptoms of deficiency. On the one hand, it does not burden the digestive system. It will not worsen stomach pain or heartburn, and on the other hand, it is considered to strengthen the digestive system: good for deficiency conditions such as those we have described (and I add additional symptoms such as frequent bowel movements and diarrhea).

 

To soften its dominant flavor, you can soak it in a lot of water for a long time (I soak it for about 12 hours). Then you can make all kinds of things from it, such as buckwheat stew with hot vegetables (I'm attaching a sample recipe) or buckwheat tortillas that can replace bread (I'm attaching a recipe for that too, I recommend doubling the amount of herbs).

 

You can also make buckwheat porridge (I haven't had the chance to make it myself yet. But I ate one like this in Russia and it was excellent) and this is the season for it.

 

There is green buckwheat and brown buckwheat (which is basically roasted buckwheat) and you can see which you connect with more. The green buckwheat is a little mucilaginous so those who don't like it can dry it after soaking.
